Baby Back Ribs with Sauce

Modified recipe of Alton Brown


1 slab baby back ribs
12 tsp brown sugar
3 Tbs salt
2 tsp chilli pudra
2 tsp combined spices (pepper, onion powder, savory, all spice, etc)
1 cup white wine
1 Tbs wine vineger
1 Tbs Worcestershire sauce
1 Tbs honey


Rubbed ribs
Into a bowl or a small cup combine all the spices and mix. Pour into a small jar with a lid with small holes. Rub the slab with a generous portion of spice. Put the slab into a heavy duty foil and wrap it with shiny side down. Make shore the alumium foil piece is longer then ribs and it doesn’t have holes in it.
Pour in the liquid
Preheat the oven at 250°F. In a cup combine the last 4 ingredients and put it in microwave, on high, for one minute. Open one end and pour in the mixture. Make sure is even distributed. Put in the oven for 2 hours and a half. Don’t open the oven in all this time.
Ribs with potatoes
Pour the sauce into a small pot and simmer until it becomes thick and the wine evaporate. Open the foil and brush the ribs with this sauce. Place it under the broiler and let it until start to caramelize. Watch it all the time, it will not take more then 7 minutes. Serve them with the remaining sauce. They are delicious!!
